Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix the almond flour, baking soda, and salt.
- In another bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
- Combine the wet and dry ingredients until a dough forms.
- Fold in the vegan chocolate chips.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet and flatten slightly.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
