Ingredients

  • 1/4 cup chopped cilantro
  • 1/4 cup sliced almonds or crunchy noodles for topping
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon grated fresh ginger
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together rice vinegar, sesame oil, soy sauce, honey, ginger, garlic, salt, and pepper to make the dressing.
  2. In a large bowl, combine green cabbage, red cabbage, carrots, bell pepper, green onions, and cilantro.
  3. Add the shredded chicken to the vegetables and toss to combine.
  4. Pour the ginger dressing over the salad and toss well to coat evenly.
