- 2 ripe avocados, diced
- 1 1/2 cups corn kernels (fresh, canned, or frozen and thawed)
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup plain Greek yogurt
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1/2 teaspoon ground cumin
- Salt and pepper, to taste
Instructions
- In a small blender or food processor, combine Greek yogurt, lime juice, olive oil, garlic, cumin, salt, and pepper. Blend until smooth to make the creamy cilantro-lime dressing.
- In a large bowl, combine diced avocados, corn, cherry tomatoes, red onion, and chopped cilantro.
- Pour the dressing over the salad ingredients and gently toss to combine, being careful not to mash the avocado.
- Adjust seasoning with additional salt and pepper if needed.
- Serve immediately or chill for 15–20 minutes before serving for best flavor.
Notes
- Use grilled or roasted corn for extra flavor.
- Add a chopped jalapeño for a spicy kick.
