Description
These baked burritos are a delicious and easy way to enjoy all the classic flavors of a burrito with a crispy baked finish.
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can (15 oz) refried beans
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 6 large flour tortillas
- 1 cup enchilada sauce
- 1/2 cup shredded Monterey Jack cheese
- Optional toppings: sour cream, chopped cilantro, sliced jalapeños
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft, about 3 minutes.
- Add ground beef and cook until browned. Drain excess grease.
- Stir in garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for another minute.
- Add refried beans and cooked rice. Stir until well combined and heated through. Remove from heat.
- Warm the tortillas slightly to make them pliable. Spoon the beef mixture onto each tortilla, sprinkle with cheddar cheese, and add a spoonful of salsa. Roll up burritos tightly.
- Place burritos seam-side down in a greased baking dish. Pour enchilada sauce over the top and sprinkle with Monterey Jack cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Serve hot with desired toppings.
Notes
- You can substitute ground beef with ground turkey or a plant-based protein.
- Use whole wheat tortillas for a healthier option.
- Leftovers can be stored in the fridge for up to 3 days.
