Description

These baked burritos are a delicious and easy way to enjoy all the classic flavors of a burrito with a crispy baked finish.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (15 oz) refried beans
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 6 large flour tortillas
  • 1 cup enchilada sauce
  • 1/2 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook until soft, about 3 minutes.
  3. Add ground beef and cook until browned. Drain excess grease.
  4. Stir in garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for another minute.
  5. Add refried beans and cooked rice. Stir until well combined and heated through. Remove from heat.
  6. Warm the tortillas slightly to make them pliable. Spoon the beef mixture onto each tortilla, sprinkle with cheddar cheese, and add a spoonful of salsa. Roll up burritos tightly.
  7. Place burritos seam-side down in a greased baking dish. Pour enchilada sauce over the top and sprinkle with Monterey Jack cheese.
  8. Bake for 20 minutes or until cheese is melted and bubbly.
  9. Serve hot with desired toppings.

Notes

  • You can substitute ground beef with ground turkey or a plant-based protein.
  • Use whole wheat tortillas for a healthier option.
  • Leftovers can be stored in the fridge for up to 3 days.
