Description

A delicious and healthy dish combining the sweetness of pineapple with the savory taste of baked salmon, creating a flavorful and nutritious meal.

Ingredients

  • 4 salmon fillets
  • 1 cup fresh pineapple chunks
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the pineapple chunks, honey, soy sauce, olive oil, garlic, ginger, sesame oil, and lemon juice. Stir well to create the pineapple glaze.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. Season the salmon with salt and pepper.
  5. Spoon the pineapple glaze over the salmon fillets, making sure they are well coated.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
  7. Remove from the oven and garnish with chopped fresh cilantro (optional).
  8. Serve immediately and enjoy!

Notes

  • You can substitute the fresh pineapple with canned pineapple, but make sure to drain it well.
  • For a spicier kick, add a pinch of red pepper flakes to the glaze.
  • Serve this dish with a side of rice or steamed vegetables for a complete meal.
