Description
A decadent fusion dessert combining the flavors of Bananas Foster with creamy banana pudding layers.
Ingredients
- 3 ripe bananas, sliced
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 2 tbsp dark rum (optional)
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1 (5.1 oz) instant vanilla pudding mix
- 2 cups cold milk
- 1 (8 oz) container vanilla Greek yogurt or whipped topping
- 1 cup vanilla wafer cookies, crushed
- Whipped cream, for topping
Instructions
- In a skillet over medium heat, melt butter and stir in brown sugar until smooth.
- Add cinnamon and nutmeg, then stir in rum (if using); simmer until sauce thickens slightly, about 2 minutes.
- Add banana slices and cook gently for 1–2 minutes until coated and warmed; remove from heat.
- Meanwhile, whisk pudding mix and cold milk until thickened (about 2 minutes).
- Fold in Greek yogurt or whipped topping until smooth and creamy.
- In serving glasses or a trifle dish, layer: a spoonful of pudding, banana sauce and bananas, crushed wafers; repeat layers, finishing with bananas and wafers.
- Chill in refrigerator for at least 1 hour to set.
- Before serving, top with whipped cream and optional drizzle of reserved banana foster sauce.
Notes
- Rum may be omitted for a kid-friendly version.
- Use low‑fat milk and yogurt to reduce calories.
- Prepare sauce just before assembling to keep bananas fresh.
- For extra crunch, garnish with toasted pecans.
