Ingredients
- 1 medium head cauliflower, cut into florets
- 1 cup all-purpose flour
- 1 cup plant-based milk
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup BBQ sauce
- 1 tbsp olive oil
- 2 cups cooked brown rice or quinoa
- 1 cup shredded lettuce or mixed greens
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/4 cup sliced red onion
- 1 tbsp chopped cilantro (optional)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, plant-based milk, garlic powder, smoked paprika, salt, and pepper until smooth.
- Dip each cauliflower floret into the batter, shake off excess, and place on the prepared baking sheet.
- Bake for 20-25 minutes until the florets are golden and crispy.
- Remove from oven, toss cauliflower in BBQ sauce, and return to the oven for an additional 10 minutes.
- Meanwhile, prepare the bowl by layering cooked brown rice or quinoa with lettuce, carrots, cucumber, and red onion.
- Top with the BBQ cauliflower bites and garnish with chopped cilantro if desired.
- Serve immediately and enjoy warm.
Notes
- You can use store-bought or homemade BBQ sauce.
