Description

BBQ Cauliflower Bites Bowl is a flavorful and healthy plant-based dish featuring crispy baked cauliflower tossed in tangy BBQ sauce, served over a bed of grains and fresh vegetables. Perfect for a satisfying lunch or dinner.


Ingredients

  • 1 medium head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 cup plant-based milk
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup BBQ sauce
  • 1 tbsp olive oil
  • 2 cups cooked brown rice or quinoa
  • 1 cup shredded lettuce or mixed greens
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red onion
  • 1 tbsp chopped cilantro (optional)


Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, plant-based milk, garlic powder, smoked paprika, salt, and pepper until smooth.
  3. Dip each cauliflower floret into the batter, shake off excess, and place on the prepared baking sheet.
  4. Bake for 20-25 minutes until the florets are golden and crispy.
  5. Remove from oven, toss cauliflower in BBQ sauce, and return to the oven for an additional 10 minutes.
  6. Meanwhile, prepare the bowl by layering cooked brown rice or quinoa with lettuce, carrots, cucumber, and red onion.
  7. Top with the BBQ cauliflower bites and garnish with chopped cilantro if desired.
  8. Serve immediately and enjoy warm.
