Ingredients
- 1 1/2 cups almond flour
- 1 tablespoon baking powder
- 2 1/2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 2 large eggs
- 1 tablespoon sesame seeds (optional for topping)
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for 1-2 minutes until melted and smooth. Stir well to combine.
- Add almond flour, baking powder, salt, and one egg to the cheese mixture. Mix until a dough forms. You may need to knead it with your hands for even consistency.
- Divide the dough into 6 equal parts and shape into bagels by rolling into logs and connecting the ends.
- Place the bagels on the prepared baking sheet. Beat the remaining egg and brush the tops of the bagels.
- Sprinkle with sesame seeds if using.
- Bake for 15-18 minutes or until golden brown.
- Cool slightly before serving. Enjoy!
