Ingredients
- 1 lb chicken breast, diced
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1 tsp paprika
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 1 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken and cook until browned and fully cooked, about 7-8 minutes.
- Remove the chicken and set aside. In the same skillet, sauté the onion and garlic until fragrant.
- Add bell peppers, zucchini, and cherry tomatoes. Cook for 5-6 minutes until vegetables are tender.
- Return the chicken to the skillet and add paprika, cumin, salt, and pepper. Stir well to combine.
- Cook for another 2-3 minutes to blend flavors.
- Remove from heat and stir in lime juice and fresh cilantro.
- Serve warm with a side of brown rice or quinoa if desired.
