- 2 large sweet potatoes, peeled and cubed
- 1 lb boneless, skinless chicken breast, diced
- 2 tablespoons olive oil
- 1/2 cup buffalo sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded mozzarella or cheddar cheese
- 2 green onions, sliced
- 1/4 cup ranch dressing (optional for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato cubes with 1 tablespoon olive oil, salt, pepper, garlic powder, and paprika. Spread them out on a baking dish.
- In a bowl, mix diced chicken with 1 tablespoon olive oil, buffalo sauce, onion powder, salt, and pepper.
- Scatter the seasoned chicken over the sweet potatoes.
- Bake uncovered for 25-30 minutes or until chicken is cooked through and sweet potatoes are tender.
- Sprinkle shredded cheese over the casserole and return to the oven for another 5 minutes or until the cheese melts.
- Garnish with sliced green onions and drizzle with ranch dressing if desired before serving.

- Adjust the buffalo sauce amount depending on your spice preference.
- Use pre-cooked chicken to shorten cooking time.
