  • 2 large sweet potatoes, peeled and cubed
  • 1 lb boneless, skinless chicken breast, diced
  • 2 tablespoons olive oil
  • 1/2 cup buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 green onions, sliced
  • 1/4 cup ranch dressing (optional for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato cubes with 1 tablespoon olive oil, salt, pepper, garlic powder, and paprika. Spread them out on a baking dish.
  3. In a bowl, mix diced chicken with 1 tablespoon olive oil, buffalo sauce, onion powder, salt, and pepper.
  4. Scatter the seasoned chicken over the sweet potatoes.
  5. Bake uncovered for 25-30 minutes or until chicken is cooked through and sweet potatoes are tender.
  6. Sprinkle shredded cheese over the casserole and return to the oven for another 5 minutes or until the cheese melts.
  7. Garnish with sliced green onions and drizzle with ranch dressing if desired before serving.
