Description

Bundt Pan Nachos are a fun, crowd-pleasing twist on classic nachos, baked in a bundt pan for a stunning, shareable presentation.


Ingredients

  • 1 bag (10 oz) tortilla chips
  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Non-stick cooking spray
  • Optional toppings: sour cream, guacamole, salsa


Instructions

  1. Preheat oven to 375°F (190°C). Grease a bundt pan with non-stick cooking spray.
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add taco seasoning and water to the beef, stir to combine, and simmer for 5 minutes until thickened.
  4. In a large bowl, gently mix tortilla chips with black beans, corn, seasoned beef, and half of both cheeses.
  5. Layer the nacho mixture into the bundt pan, pressing lightly to pack it together.
  6. Top with the remaining cheese, olives, jalapeños, and tomatoes.
  7. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Let cool for 5 minutes, then carefully invert onto a serving plate.
  9. Garnish with green onions and cilantro. Serve with sour cream, guacamole, and salsa if desired.
