A flavorful and spicy Cajun chicken dish cooked with colorful bell peppers, perfect for a quick and hearty dinner.

- 2 boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon lemon juice (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a bowl, toss the sliced chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken and cook for about 5-6 minutes, until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add a little more oil if needed and sauté the bell peppers for 4-5 minutes until tender-crisp.
- Return the chicken to the skillet and stir to combine with the peppers. Add lemon juice if using.
- Cook for another 2 minutes to heat everything through.
- Garnish with fresh parsley if desired and serve hot.
Notes
- You can use pre-made Cajun seasoning or make your own blend.
- Great served with rice, quinoa, or in tortillas as wraps.
- Adjust spice level by varying the amount of Cajun seasoning.
