Description

A flavorful and spicy Cajun chicken dish cooked with colorful bell peppers, perfect for a quick and hearty dinner.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a bowl, toss the sliced chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken and cook for about 5-6 minutes, until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add a little more oil if needed and sauté the bell peppers for 4-5 minutes until tender-crisp.
  5. Return the chicken to the skillet and stir to combine with the peppers. Add lemon juice if using.
  6. Cook for another 2 minutes to heat everything through.
  7. Garnish with fresh parsley if desired and serve hot.

Notes

  • You can use pre-made Cajun seasoning or make your own blend.
  • Great served with rice, quinoa, or in tortillas as wraps.
  • Adjust spice level by varying the amount of Cajun seasoning.
