Description
A flavorful and cheesy Chicken Fajita Casserole packed with tender chicken, bell peppers, onions, and fajita seasoning, all baked to perfection.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 1 packet fajita seasoning mix (about 1 oz)
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lime juice
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add sliced chicken, salt, and pepper. Cook until chicken is no longer pink, about 5-6 minutes.
- Add bell peppers and onions to the skillet and cook for another 4-5 minutes until vegetables are slightly tender.
- Stir in the fajita seasoning mix and lime juice. Mix well to coat everything evenly.
- Remove from heat and mix in sour cream.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Top with shredded cheddar and Monterey Jack cheeses.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro if desired and serve warm.
Notes
- Use pre-cooked rotisserie chicken to save time.
- Add black beans or corn for extra texture and flavor.
- Serve with rice, tortillas, or a green salad.
