Description

A flavorful and cheesy Chicken Fajita Casserole packed with tender chicken, bell peppers, onions, and fajita seasoning, all baked to perfection.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 packet fajita seasoning mix (about 1 oz)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add sliced chicken, salt, and pepper. Cook until chicken is no longer pink, about 5-6 minutes.
  3. Add bell peppers and onions to the skillet and cook for another 4-5 minutes until vegetables are slightly tender.
  4. Stir in the fajita seasoning mix and lime juice. Mix well to coat everything evenly.
  5. Remove from heat and mix in sour cream.
  6. Transfer the mixture to a greased 9×13-inch baking dish.
  7. Top with shredded cheddar and Monterey Jack cheeses.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro if desired and serve warm.

Notes

  • Use pre-cooked rotisserie chicken to save time.
  • Add black beans or corn for extra texture and flavor.
  • Serve with rice, tortillas, or a green salad.
