Description

Chicken foil packets are a simple, healthy, and delicious all-in-one meal. Tender chicken breasts are combined with fresh vegetables, herbs, and seasonings, then sealed in foil and baked to juicy perfection.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup baby potatoes, halved
  • 1 cup baby carrots
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 4 sheets aluminum foil


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the baby potatoes, carrots, bell pepper, and zucchini with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  3. Place each chicken breast on a sheet of aluminum foil.
  4. Divide the vegetable mixture evenly among the foil packets, arranging them around the chicken.
  5. Fold the sides of the foil over the chicken and vegetables to seal completely.
  6. Place foil packets on a baking sheet and bake for 30-35 minutes, or until the chicken is cooked through and vegetables are tender.
  7. Carefully open the foil packets (watch for steam), garnish with fresh parsley, and serve.

Notes

  • You can add a squeeze of lemon juice before sealing for extra flavor.
  • Swap vegetables based on what’s in season or your preference.
  • For grilled packets, cook over medium heat for 20-25 minutes, flipping once.
