Chicken foil packets are a simple, healthy, and delicious all-in-one meal. Tender chicken breasts are combined with fresh vegetables, herbs, and seasonings, then sealed in foil and baked to juicy perfection.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup baby potatoes, halved
- 1 cup baby carrots
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 4 sheets aluminum foil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes, carrots, bell pepper, and zucchini with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Place each chicken breast on a sheet of aluminum foil.
- Divide the vegetable mixture evenly among the foil packets, arranging them around the chicken.
- Fold the sides of the foil over the chicken and vegetables to seal completely.
- Place foil packets on a baking sheet and bake for 30-35 minutes, or until the chicken is cooked through and vegetables are tender.
- Carefully open the foil packets (watch for steam), garnish with fresh parsley, and serve.
Notes
- You can add a squeeze of lemon juice before sealing for extra flavor.
- Swap vegetables based on what’s in season or your preference.
- For grilled packets, cook over medium heat for 20-25 minutes, flipping once.
