Description

A delicious and easy one-pan Chicken Parmesan Pasta Skillet, combining tender chicken, pasta, marinara sauce, and melty cheese for a comforting meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 2 cups chicken broth
  • 8 ounces penne or rotini pasta
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-6 minutes.
  3. Add garlic and sauté for 1 minute until fragrant.
  4. Pour in marinara sauce and chicken broth, and stir to combine.
  5. Add uncooked pasta, basil, and oregano. Stir and bring to a boil.
  6. Reduce heat, cover, and simmer for 12-15 minutes, or until pasta is tender, stirring occasionally.
  7. Sprinkle mozzarella and Parmesan cheeses over the pasta, cover, and let cheese melt for 2-3 minutes.
  8. Garnish with fresh basil or parsley if desired. Serve warm.

Notes

  • Use rotisserie chicken to save time on prep.
  • For extra crunch, top with toasted breadcrumbs before serving.
  • You can substitute whole wheat or gluten-free pasta as needed.
