A delicious and easy one-pan Chicken Parmesan Pasta Skillet, combining tender chicken, pasta, marinara sauce, and melty cheese for a comforting meal.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 2 cups chicken broth
- 8 ounces penne or rotini pasta
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-6 minutes.
- Add garlic and sauté for 1 minute until fragrant.
- Pour in marinara sauce and chicken broth, and stir to combine.
- Add uncooked pasta, basil, and oregano. Stir and bring to a boil.
- Reduce heat, cover, and simmer for 12-15 minutes, or until pasta is tender, stirring occasionally.
- Sprinkle mozzarella and Parmesan cheeses over the pasta, cover, and let cheese melt for 2-3 minutes.
- Garnish with fresh basil or parsley if desired. Serve warm.
Notes
- Use rotisserie chicken to save time on prep.
- For extra crunch, top with toasted breadcrumbs before serving.
- You can substitute whole wheat or gluten-free pasta as needed.
