Ingredients
- 2 cups cooked chicken, shredded or diced
- 4 cups potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme (optional)
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large pot, boil diced potatoes for about 10 minutes or until just tender. Drain and set aside.
- In a large bowl, combine sour cream, milk, melted butter, salt, pepper, paprika, and garlic.
- Add cooked chicken, boiled potatoes, chopped onion, and half of the cheese to the bowl. Mix well.
- Transfer the mixture to a greased 9×13 inch baking dish. Spread evenly.
- Sprinkle the remaining cheese on top.
- Bake uncovered for 25–30 minutes or until the top is golden and bubbly.
- Garnish with chopped parsley before serving, if desired.
Notes
- You can substitute sour cream with Greek yogurt for a healthier version.
- Rotisserie chicken works great for convenience.
- Feel free to add cooked vegetables like peas or broccoli for extra nutrition.
