Description

A comforting and hearty baked dish made with tender chicken, creamy potatoes, and melted cheese—perfect for family dinners or potlucks.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 4 cups potatoes, peeled and diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme (optional)
  • 1/4 cup chopped fresh parsley (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large pot, boil diced potatoes for about 10 minutes or until just tender. Drain and set aside.
  3. In a large bowl, combine sour cream, milk, melted butter, salt, pepper, paprika, and garlic.
  4. Add cooked chicken, boiled potatoes, chopped onion, and half of the cheese to the bowl. Mix well.
  5. Transfer the mixture to a greased 9×13 inch baking dish. Spread evenly.
  6. Sprinkle the remaining cheese on top.
  7. Bake uncovered for 25–30 minutes or until the top is golden and bubbly.
  8. Garnish with chopped parsley before serving, if desired.

Notes

  • You can substitute sour cream with Greek yogurt for a healthier version.
  • Rotisserie chicken works great for convenience.
  • Feel free to add cooked vegetables like peas or broccoli for extra nutrition.
