- 12 oz spaghetti
- 2 chicken breasts, cooked and shredded
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 4 tbsp unsalted butter
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 8 oz burrata cheese
- 2 tbsp chopped fresh parsley
- 1/4 cup grated Parmesan (optional)
Instructions
- Cook the spaghetti in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add butter, lemon juice, lemon zest, red pepper flakes, salt, and pepper. Stir and simmer for 2–3 minutes.
- Add the cooked shredded chicken to the skillet and toss to coat in the sauce.
- Add the drained spaghetti to the skillet and toss everything together until well combined.
- Transfer to serving plates or a large bowl. Tear the burrata into pieces and place on top of the hot pasta.
- Sprinkle with chopped parsley and Parmesan if using. Serve immediately.
Notes
- Use rotisserie chicken for a quicker prep.
- Burrata should be added just before serving for maximum creaminess.
- Can substitute spaghetti with linguine or fettuccine.
