Description

A delicious vegetarian twist on the classic Sloppy Joes, made with hearty chickpeas in a tangy, smoky tomato sauce. Perfect for a quick and healthy weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 hamburger buns
  • Optional toppings: pickles, coleslaw, avocado slices

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and bell pepper, and sauté until soft, about 5 minutes.
  2. Stir in the garlic and cook for 1 minute more.
  3. Add chickpeas and mash slightly with a spoon or potato masher, leaving some whole for texture.
  4. Stir in tomato sauce, tomato paste, maple syrup, soy sauce, smoked paprika, and cumin. Mix well and simmer for 10 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Toast buns if desired, and fill with the chickpea mixture.
  7. Add any optional toppings and serve hot.

Notes

  • You can substitute maple syrup with brown sugar or honey if preferred.
  • Add a dash of hot sauce for a spicy kick.
  • Great as leftovers and can be refrigerated for up to 3 days.
