A delicious vegetarian twist on the classic Sloppy Joes, made with hearty chickpeas in a tangy, smoky tomato sauce. Perfect for a quick and healthy weeknight meal.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 cup tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon maple syrup
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 4 hamburger buns
- Optional toppings: pickles, coleslaw, avocado slices
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and bell pepper, and sauté until soft, about 5 minutes.
- Stir in the garlic and cook for 1 minute more.
- Add chickpeas and mash slightly with a spoon or potato masher, leaving some whole for texture.
- Stir in tomato sauce, tomato paste, maple syrup, soy sauce, smoked paprika, and cumin. Mix well and simmer for 10 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Toast buns if desired, and fill with the chickpea mixture.
- Add any optional toppings and serve hot.
Notes
- You can substitute maple syrup with brown sugar or honey if preferred.
- Add a dash of hot sauce for a spicy kick.
- Great as leftovers and can be refrigerated for up to 3 days.
