Instructions
- Place chopped chocolate in a heatproof bowl.
- In a small saucepan, heat heavy cream over medium heat until just simmering. Do not boil.
- Pour hot cream over the chocolate. Let sit for 2–3 minutes, then stir gently until smooth and glossy.
- Stir in vanilla extract and a pinch of salt, if using.
- Cover and refrigerate the ganache for 1–2 hours, or until firm enough to scoop.
- Using a small scoop or spoon, roll ganache into 1-inch balls. Work quickly to avoid melting.
- Roll truffles in your choice of coating (cocoa powder, chopped nuts, or sprinkles).
- Place finished truffles on a parchment-lined tray and chill until ready to serve.
