Description

Ingredients

Cake:

  • 1 cup unsalted butter (softened)
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1/2 cup brewed coffee (cooled)

Peanut Butter Glaze:

  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 23 tablespoons milk

Optional Garnish:

  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease a 10–12 cup bundt pan.
  2. Cream butter and sugar: In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  3. Combine dry and wet ingredients: In a separate bowl, whisk flour, cocoa, baking soda, and salt. Add dry ingredients to wet mixture alternately with sour cream and coffee.
  4. Bake: Pour batter into pan and bake for 50–60 minutes until a toothpick comes out clean. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  5. Make peanut butter glaze: Whisk together peanut butter, powdered sugar, and milk until desired consistency. Drizzle over cooled cake and garnish with chocolate chips.

  • Espresso can be used instead of coffee for a richer flavor.
