Description

Juicy and flavorful cilantro lime chicken thighs marinated in a zesty mixture of lime juice, garlic, and fresh cilantro, then grilled or pan-seared to perfection.


Ingredients

  • 6 boneless, skinless chicken thighs
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a bowl, whisk together lime juice, olive oil, garlic, cilantro, cumin, chili powder, salt, and pepper.
  2. Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from marinade and cook for 5-7 minutes per side or until internal temperature reaches 165°F (74°C).
  5. Remove from heat and let rest for 5 minutes before serving.
