Juicy and flavorful cilantro lime chicken thighs marinated in a zesty mixture of lime juice, garlic, and fresh cilantro, then grilled or pan-seared to perfection.
Ingredients
- 6 boneless, skinless chicken thighs
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together lime juice, olive oil, garlic, cilantro, cumin, chili powder, salt, and pepper.
- Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat grill or skillet over medium-high heat.
- Remove chicken from marinade and cook for 5-7 minutes per side or until internal temperature reaches 165°F (74°C).
- Remove from heat and let rest for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken overnight.
