Description

A comforting, hearty classic meatloaf made with ground beef, breadcrumbs, and a flavorful glaze, perfect for a family dinner.


Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 cup chopped parsley (optional)
  • For the glaze: 1/2 cup ketchup, 2 tbsp brown sugar, 1 tbsp mustard

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or use a loaf pan.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, eggs, onion, garlic, 1/4 cup ketchup, Worcestershire sauce, salt, pepper, thyme, and parsley. Mix until just combined.
  3. Shape the mixture into a loaf on the prepared baking sheet or press into a loaf pan.
  4. In a small bowl, mix together the glaze ingredients: 1/2 cup ketchup, brown sugar, and mustard. Spread half of the glaze over the meatloaf.
  5. Bake for 45 minutes, then remove and spread the remaining glaze over the top. Return to oven and bake for an additional 15 minutes, or until internal temperature reaches 160°F (71°C).
  6. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • Do not overmix the meat mixture to keep the loaf tender.
  • You can substitute ground turkey or pork for part of the beef.
  • Leftovers make great sandwiches the next day.
