Description
A refreshing and versatile Classic Pasta Salad made with rotini pasta, fresh vegetables, and a tangy Italian dressing. Perfect for picnics, barbecues, or as a light lunch.
Ingredients
- 12 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1 cup cheddar cheese, cubed
- 3/4 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, olives, and cheese.
- Pour the Italian dressing over the salad and toss to coat evenly.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.
Notes
- You can use any short pasta like penne or fusilli.
- Substitute cheddar with mozzarella or feta if desired.
- For a protein boost, add grilled chicken or chickpeas.
