Description
A classic Cobb Salad packed with fresh vegetables, proteins, and topped with a rich, tangy homemade dressing that’s bursting with flavor.
Ingredients
- 6 cups chopped romaine lettuce
- 2 cups cooked chicken breast, diced
- 4 slices bacon, cooked and crumbled
- 2 hard-boiled eggs, peeled and chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup blue cheese, crumbled
- 1/4 cup red onion, finely sliced
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp Dijon mustard
- 1 garlic clove, minced
- 1 tsp honey
- Salt and pepper to taste
Instructions
- In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, honey, salt, and pepper to make the dressing. Set aside.
- In a large salad bowl or platter, arrange the chopped romaine lettuce as the base.
- Top the lettuce with rows of chicken, bacon, eggs, avocado, cherry tomatoes, blue cheese, and red onion.
- Drizzle the dressing evenly over the salad right before serving.
- Toss the salad gently to combine or serve with the dressing on the side.
Notes
- You can substitute grilled shrimp or turkey for the chicken.
- Use ranch or balsamic dressing as an alternative if desired.
- Make the dressing ahead of time and store in the fridge for up to 5 days.
