Description

Corn Casserole with Sausage is a savory, comforting side dish made with sweet corn, creamy corn, sausage, and cornbread mix—baked until golden and delicious, perfect for potlucks and holiday dinners.

Ingredients

Units Scale
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can cream-style corn
  • 1 (8.5 oz) box corn muffin mix (like Jiffy)
  • 1/2 cup sour cream
  • 1/4 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1/2 pound ground sausage (mild or spicy), cooked and crumbled
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9 inch baking dish.
  2. In a large bowl, combine drained whole corn, cream-style corn, corn muffin mix, sour cream, melted butter, cheese, cooked sausage, pepper, and garlic powder if using. Stir until well combined.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Bake uncovered for 45–50 minutes, or until the top is golden and the center is set.
  5. Let cool for 5–10 minutes before serving.

Notes

  • Use spicy sausage for extra flavor and heat.
  • Add chopped green onions or diced jalapeños for a twist.
  • Can be doubled and baked in a 9×13 inch dish for a crowd.
