Description

A creamy, cheesy corn dip perfect for parties and gatherings, served warm or cold with tortilla chips or veggies.


Ingredients

  • 2 cups corn kernels (fresh, canned, or frozen and thawed)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup chopped green onions
  • 1/4 cup chopped red bell pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, finely chopped (optional for heat)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together the corn, cheddar cheese, sour cream, mayonnaise, green onions, red bell pepper, garlic powder, chili powder, salt, pepper, and jalapeño if using.
  3. Transfer the mixture to a baking dish and spread evenly.
  4. Bake for 20–25 minutes, or until hot and bubbly.
  5. Remove from oven and let it cool slightly before serving.
  6. Serve warm with tortilla chips, crackers, or sliced vegetables.

Notes

  • Use canned corn for convenience, but fresh grilled corn adds extra flavor.
  • This dip can also be served cold if preferred.
  • Add crumbled bacon for a smoky twist.
  • Make ahead and refrigerate, then bake before serving.
