Description
A creamy, cheesy corn dip perfect for parties and gatherings, served warm or cold with tortilla chips or veggies.
Ingredients
- 2 cups corn kernels (fresh, canned, or frozen and thawed)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup chopped green onions
- 1/4 cup chopped red bell pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 jalapeño, finely chopped (optional for heat)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix together the corn, cheddar cheese, sour cream, mayonnaise, green onions, red bell pepper, garlic powder, chili powder, salt, pepper, and jalapeño if using.
- Transfer the mixture to a baking dish and spread evenly.
- Bake for 20–25 minutes, or until hot and bubbly.
- Remove from oven and let it cool slightly before serving.
- Serve warm with tortilla chips, crackers, or sliced vegetables.
Notes
- Use canned corn for convenience, but fresh grilled corn adds extra flavor.
- This dip can also be served cold if preferred.
- Add crumbled bacon for a smoky twist.
- Make ahead and refrigerate, then bake before serving.
