Description
Corn ribs are a fun and flavorful twist on traditional corn on the cob, seasoned and roasted or air-fried into crispy, curved pieces resembling ribs.
Ingredients
- 4 ears of corn, husked
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped (optional, for garnish)
- Lime wedges (optional, for serving)
Instructions
- Preheat your oven to 400°F (200°C) or air fryer to 375°F (190°C).
- Cut each ear of corn lengthwise into quarters to create rib-like shapes (you may need a sharp knife and firm pressure).
- In a small bowl, mix olive oil with smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.
- Brush the seasoning mixture generously over the corn quarters.
- Place the corn ribs on a baking sheet lined with parchment paper or into the air fryer basket in a single layer.
- Roast in the oven for 25–30 minutes or air fry for 12–15 minutes until the edges are crispy and the corn curls slightly.
- Garnish with chopped cilantro or parsley and serve with lime wedges if desired.
Notes
- Be careful while cutting the corn; use a sturdy knife and stable surface.
- Adjust the spice level by increasing or reducing chili powder.
- Try adding grated parmesan or vegan cheese on top before serving for extra flavor.
