Description

Corn ribs are a fun and flavorful twist on traditional corn on the cob, seasoned and roasted or air-fried into crispy, curved pieces resembling ribs.

Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) or air fryer to 375°F (190°C).
  2. Cut each ear of corn lengthwise into quarters to create rib-like shapes (you may need a sharp knife and firm pressure).
  3. In a small bowl, mix olive oil with smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.
  4. Brush the seasoning mixture generously over the corn quarters.
  5. Place the corn ribs on a baking sheet lined with parchment paper or into the air fryer basket in a single layer.
  6. Roast in the oven for 25–30 minutes or air fry for 12–15 minutes until the edges are crispy and the corn curls slightly.
  7. Garnish with chopped cilantro or parsley and serve with lime wedges if desired.

Notes

  • Be careful while cutting the corn; use a sturdy knife and stable surface.
  • Adjust the spice level by increasing or reducing chili powder.
  • Try adding grated parmesan or vegan cheese on top before serving for extra flavor.
