  • 2 chicken breasts, sliced thin
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 12 oz penne pasta
  • Chopped parsley, for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a bowl, toss the sliced chicken with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, add butter and garlic. Sauté for 1 minute until fragrant.
  5. Add the sliced bell peppers and cook for 3-4 minutes until tender.
  6. Pour in the heavy cream and chicken broth. Stir and bring to a simmer.
  7. Add Parmesan cheese, salt, and pepper. Stir until the cheese is melted and the sauce is creamy.
  8. Return the cooked chicken to the skillet. Stir to coat in the sauce.
  9. Add the cooked penne pasta and toss everything together until well combined and heated through.
  10. Garnish with chopped parsley and serve hot.
