- 2 chicken breasts, sliced thin
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 12 oz penne pasta
- Chopped parsley, for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a bowl, toss the sliced chicken with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add butter and garlic. Sauté for 1 minute until fragrant.
- Add the sliced bell peppers and cook for 3-4 minutes until tender.
- Pour in the heavy cream and chicken broth. Stir and bring to a simmer.
- Add Parmesan cheese, salt, and pepper. Stir until the cheese is melted and the sauce is creamy.
- Return the cooked chicken to the skillet. Stir to coat in the sauce.
- Add the cooked penne pasta and toss everything together until well combined and heated through.
- Garnish with chopped parsley and serve hot.
