Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup baby spinach
  • Salt and pepper to taste
  • 1/2 teaspoon dried Italian herbs


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced chicken sausage and cook until browned, about 5-6 minutes.
  3. Add diced onion and cook until softened, about 3 minutes. Stir in garlic and cook for 1 more minute.
  4. Add orzo pasta and stir to toast for 1-2 minutes.
  5. Pour in chicken broth, bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
  6. Stir in heavy cream and Parmesan cheese, cook for another 2-3 minutes until orzo is creamy and tender.
  7. Add baby spinach and cook until wilted, about 1 minute.
  8. Season with salt, pepper, and Italian herbs. Serve warm.

Notes

  • You can substitute chicken sausage with turkey or plant-based sausage.
  • Use half-and-half instead of cream for a lighter version.
  • Frozen spinach can be used if fresh is not available.
