Ingredients
- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup baby spinach
- Salt and pepper to taste
- 1/2 teaspoon dried Italian herbs
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced chicken sausage and cook until browned, about 5-6 minutes.
- Add diced onion and cook until softened, about 3 minutes. Stir in garlic and cook for 1 more minute.
- Add orzo pasta and stir to toast for 1-2 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.
- Stir in heavy cream and Parmesan cheese, cook for another 2-3 minutes until orzo is creamy and tender.
- Add baby spinach and cook until wilted, about 1 minute.
- Season with salt, pepper, and Italian herbs. Serve warm.
Notes
- You can substitute chicken sausage with turkey or plant-based sausage.
- Use half-and-half instead of cream for a lighter version.
- Frozen spinach can be used if fresh is not available.
