Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz fettuccine or pasta of choice
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink and cooked through. Remove and set aside.
- In the same skillet, add garlic and red pepper flakes. Sauté for 1 minute until fragrant.
- Add sun-dried tomatoes and cook for another minute.
- Pour in the chicken broth and heavy cream. Stir in Parmesan cheese and Italian seasoning. Bring to a gentle simmer and cook until the sauce thickens slightly.
- Return the shrimp to the skillet and simmer for another 2 minutes to heat through.
- Add the cooked pasta to the sauce and toss to coat evenly.
- Serve hot, garnished with chopped basil or parsley.

- You can substitute the shrimp with chicken or scallops if desired.
