Description

A hearty and comforting creamy slow cooker beef pasta, made with tender beef, rich tomato sauce, and a creamy finish, perfect for an easy weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (24 oz) jar pasta sauce
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup beef broth
  • 8 oz cream cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 12 oz pasta (penne or rotini)
  • 2 tbsp chopped fresh parsley (optional for garnish)


Instructions

  1. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the beef and cook until softened, about 3 minutes.
  3. Transfer the beef mixture to a slow cooker.
  4. Stir in pasta sauce, diced tomatoes, Italian seasoning, salt, pepper, and beef broth.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in the cubed cream cheese until melted and well combined.
  7. Cook the pasta according to package instructions, then drain.
  8. Stir the cooked pasta and mozzarella cheese into the slow cooker. Mix until well combined and creamy.
  9. Serve warm, garnished with chopped parsley if desired.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Use any short pasta variety you prefer.
  • Add red pepper flakes for a spicier kick.
