Description
A hearty and comforting creamy slow cooker beef pasta, made with tender beef, rich tomato sauce, and a creamy finish, perfect for an easy weeknight dinner.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 (24 oz) jar pasta sauce
- 1 (14.5 oz) can diced tomatoes
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup beef broth
- 8 oz cream cheese, cubed
- 1 cup shredded mozzarella cheese
- 12 oz pasta (penne or rotini)
- 2 tbsp chopped fresh parsley (optional for garnish)
Instructions
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add chopped onion and minced garlic to the beef and cook until softened, about 3 minutes.
- Transfer the beef mixture to a slow cooker.
- Stir in pasta sauce, diced tomatoes, Italian seasoning, salt, pepper, and beef broth.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the cubed cream cheese until melted and well combined.
- Cook the pasta according to package instructions, then drain.
- Stir the cooked pasta and mozzarella cheese into the slow cooker. Mix until well combined and creamy.
- Serve warm, garnished with chopped parsley if desired.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Use any short pasta variety you prefer.
- Add red pepper flakes for a spicier kick.
