- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup heavy cream

- 1 cup baby spinach (optional)
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper, then cook until browned and cooked through. Remove and set aside.
- In the same skillet, add garlic and sun-dried tomatoes; sauté for 1-2 minutes.
- Add orzo and toast for 1-2 minutes, stirring frequently.
- Pour in chicken broth, bring to a simmer, and cook until orzo is al dente, about 8-10 minutes, stirring occasionally.
- Stir in heavy cream, Parmesan cheese, and Italian seasoning.
- Return chicken to the skillet and mix well. Add spinach if using and cook until wilted.
- Garnish with fresh basil before serving.
