Description

Creamy Sun-Dried Tomato Chicken Orzo is a rich and hearty one-pan dish featuring tender chicken, flavorful sun-dried tomatoes, and creamy orzo pasta, perfect for a comforting meal.

Ingredients

Units Scale
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 cup baby spinach (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper, then cook until browned and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sun-dried tomatoes; sauté for 1-2 minutes.
  4. Add orzo and toast for 1-2 minutes, stirring frequently.
  5. Pour in chicken broth, bring to a simmer, and cook until orzo is al dente, about 8-10 minutes, stirring occasionally.
  6. Stir in heavy cream, Parmesan cheese, and Italian seasoning.
  7. Return chicken to the skillet and mix well. Add spinach if using and cook until wilted.
  8. Garnish with fresh basil before serving.

Notes

  • Use sun-dried tomatoes packed in oil for extra flavor.
  • Substitute spinach with kale or arugula if preferred.
  • Adjust cream and cheese amounts for desired creaminess.
  • For a lighter version, use half-and-half instead of heavy cream.
