Description

Crispy Cheesy Hash Browns are golden brown and crunchy on the outside with a gooey, cheesy center—perfect as a savory side dish for breakfast or brunch.


Ingredients

  • 3 cups shredded russet potatoes (about 2 large potatoes)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1 egg, beaten
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 23 tbsp vegetable oil (for frying)

Instructions

  1. Place shredded potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
  2. In a large bowl, combine shredded potatoes, cheddar cheese, Parmesan, onion, egg, flour, garlic powder, salt, and pepper. Mix well.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Scoop about 1/4 cup of the mixture and flatten into a patty. Place in the skillet and repeat with remaining mixture.
  5. Cook for 3–4 minutes on each side, or until golden brown and crispy. Work in batches if needed.
  6. Transfer to a paper towel-lined plate to drain excess oil. Serve hot.

  • Make sure to squeeze out moisture from potatoes to ensure crispiness.
  • Use a mix of cheeses for different flavor profiles.
