- 3 cups shredded russet potatoes (about 2 large potatoes)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1 egg, beaten
- 2 tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2–3 tbsp vegetable oil (for frying)
Instructions
- Place shredded potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine shredded potatoes, cheddar cheese, Parmesan, onion, egg, flour, garlic powder, salt, and pepper. Mix well.
- Heat vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the mixture and flatten into a patty. Place in the skillet and repeat with remaining mixture.
- Cook for 3–4 minutes on each side, or until golden brown and crispy. Work in batches if needed.
- Transfer to a paper towel-lined plate to drain excess oil. Serve hot.
Notes
- Make sure to squeeze out moisture from potatoes to ensure crispiness.
- Use a mix of cheeses for different flavor profiles.
- Can be frozen after cooking and reheated in an oven or air fryer.
