Description

A hearty and flavorful Crockpot Cowboy Casserole made with ground beef, beans, potatoes, and vegetables. It’s a comforting one-pot meal that’s perfect for busy weeknights or cozy weekends.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups diced potatoes (about 3 medium potatoes)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) diced tomatoes with green chilies (Rotel)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup beef broth
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup shredded cheddar cheese (optional, for topping)


Instructions

  1. In a skillet over medium heat, cook ground beef with chopped onion and garlic until browned. Drain excess grease.
  2. Transfer beef mixture to the crockpot.
  3. Add diced potatoes, kidney beans, corn, diced tomatoes, cream of mushroom soup, beef broth, chili powder, salt, and pepper to the crockpot.
  4. Stir to combine all ingredients well.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes are tender.
  6. If using, sprinkle shredded cheddar cheese over the top and let it melt before serving.
  7. Serve hot and enjoy!

  • Use ground turkey or chicken as a lighter alternative to ground beef.
  • You can add bell peppers or green beans for extra veggies.
  • For a spicier kick, add diced jalapeños or extra chili powder.
