Description

Crockpot Lasagna Soup is a hearty and comforting dish that transforms classic lasagna into an easy, slow-cooked soup loaded with Italian flavors, pasta, and cheese.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)


Instructions

  1. In a skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft. Add garlic and cook for another minute.
  2. Transfer the beef mixture to the crockpot.
  3. Add marinara sauce, beef broth, diced tomatoes, Italian seasoning, salt, pepper, and red pepper flakes to the crockpot. Stir to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, add the broken lasagna noodles to the soup. Stir and continue cooking until the noodles are tender.
  6. In a small bowl, mix together ricotta, mozzarella, and Parmesan cheeses.
  7. When ready to serve, ladle the soup into bowls and top with a scoop of the cheese mixture and fresh herbs if desired.

Notes

  • You can substitute ground turkey or sausage for the ground beef.
  • Use oven-ready lasagna noodles if you prefer a quicker cooking pasta.
  • Add spinach or zucchini for extra vegetables.
