Description

Ingredients

  • 1 medium head cauliflower, riced
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced cucumber
  • 1/4 cup shredded carrots
  • 1/4 cup chopped red onion
  • 1/2 avocado, sliced
  • 1/4 cup hummus or tahini
  • 1/4 cup crumbled feta (optional)
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • Fresh parsley or cilantro for garnish

Instructions

  1. Rice the cauliflower by pulsing florets in a food processor until it resembles rice.
  2. Heat olive oil in a skillet over medium heat and sauté garlic for 1 minute.
  3. Add riced cauliflower and cook for 5-7 minutes, stirring occasionally, until tender.
  4. Season with salt, pepper, and lemon juice. Remove from heat and let cool slightly.
  5. Assemble bowls by placing cauliflower rice at the base and topping with bell pepper, cucumber, carrots, red onion, and avocado.
  6. Add a dollop of hummus or drizzle with tahini. Sprinkle feta if using.
