Ingredients

  • 2 tablespoons olive oil
  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 oz (225g) pasta (penne or fettuccine recommended)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
  2. Season the chicken bites with salt, pepper, and Italian seasoning.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken bites and cook until golden and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  4. In the same skillet, reduce heat to medium and add the butter. Once melted, stir in the minced garlic and red pepper flakes. Cook for 1-2 minutes until fragrant.
  5. Return the chicken bites to the skillet and stir to coat in the garlic butter sauce.
  6. Add the cooked pasta to the skillet and toss everything together until well combined.
  7. Sprinkle with Parmesan cheese and chopped parsley before serving.

Notes

  • You can use chicken thighs instead of chicken breasts for more flavor.
  • Add a splash of chicken broth or pasta water if the sauce is too thick.
