- 2 tablespoons olive oil
- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 8 oz (225g) pasta (penne or fettuccine recommended)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
- Season the chicken bites with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken bites and cook until golden and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add the butter. Once melted, stir in the minced garlic and red pepper flakes. Cook for 1-2 minutes until fragrant.
- Return the chicken bites to the skillet and stir to coat in the garlic butter sauce.
- Add the cooked pasta to the skillet and toss everything together until well combined.
- Sprinkle with Parmesan cheese and chopped parsley before serving.
Notes
- You can use chicken thighs instead of chicken breasts for more flavor.
- Add a splash of chicken broth or pasta water if the sauce is too thick.
- Great with a side of garlic bread or a green salad.
