Description

A creamy and unique ice cream infused with the bold, sweet flavor of Dr. Pepper soda. Perfect for soda lovers and ice cream enthusiasts alike.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 cup Dr. Pepper (reduced)
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • Pinch of salt


Instructions

  1. Pour 2 cups of Dr. Pepper into a saucepan and simmer over medium heat until reduced to 1 cup. Let cool.
  2. In a separate saucepan, heat the heavy cream, whole milk, and salt over medium heat until warm but not boiling.
  3. In a bowl, whisk the egg yolks and sugar until pale and thick.
  4. Slowly add the warm cream mixture into the egg yolks while whisking constantly to temper the eggs.
  5. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  6. Remove from heat and stir in the reduced Dr. Pepper and vanilla extract.
  7. Let the mixture cool to room temperature, then chill in the refrigerator for at least 4 hours or overnight.
  8. Churn the chilled mixture in an ice cream maker according to the manufacturer’s instructions.
  9. Transfer the churned ice cream to an airtight container and freeze for at least 2 hours before serving.

Notes

  • Use diet Dr. Pepper for a lower sugar option.
  • Ensure the Dr. Pepper reduction is completely cool before adding to the custard.
  • Serve with a cherry on top for a classic soda fountain vibe.
