- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 cup chopped onions
- 3 cloves garlic, minced
- 2 cups sliced mushrooms (button or cremini)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper and add them to the skillet. Cook for about 5-6 minutes on each side until golden and cooked through. Remove the chicken and set aside.
- In the same skillet, add the chopped onions and garlic. Cook for 2-3 minutes until softened.
- Add the sliced mushrooms and cook for another 5 minutes, until they release their moisture and begin to brown.
- Pour in the chicken broth, scraping any browned bits off the bottom of the skillet. Stir in the heavy cream and thyme. Bring to a simmer.
- Return the chicken breasts to the skillet and simmer for 5-7 minutes until the sauce thickens and the chicken is fully coated with the mushroom sauce.
- Garnish with fresh parsley and serve hot.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- Feel free to add a squeeze of lemon juice to brighten up the flavors.
- Serve this dish with rice, mashed potatoes, or a side salad for a complete meal.
