Description

A simple and delicious mushroom chicken recipe that combines tender chicken with savory mushrooms in a creamy sauce, perfect for a quick and flavorful meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup chopped onions
  • 3 cloves garlic, minced
  • 2 cups sliced mushrooms (button or cremini)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper and add them to the skillet. Cook for about 5-6 minutes on each side until golden and cooked through. Remove the chicken and set aside.
  3. In the same skillet, add the chopped onions and garlic. Cook for 2-3 minutes until softened.
  4. Add the sliced mushrooms and cook for another 5 minutes, until they release their moisture and begin to brown.
  5. Pour in the chicken broth, scraping any browned bits off the bottom of the skillet. Stir in the heavy cream and thyme. Bring to a simmer.
  6. Return the chicken breasts to the skillet and simmer for 5-7 minutes until the sauce thickens and the chicken is fully coated with the mushroom sauce.
  7. Garnish with fresh parsley and serve hot.

Notes

  • For a lighter version, you can use half-and-half instead of heavy cream.
  • Feel free to add a squeeze of lemon juice to brighten up the flavors.
  • Serve this dish with rice, mashed potatoes, or a side salad for a complete meal.
