- 2 cups cooked chicken, shredded
- 8 oz egg noodles
- 4 cups chicken broth
- 1 cup water
- 1 cup frozen peas and carrots
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and sauté until translucent.
- Pour in the chicken broth and water, then bring to a boil.
- Add the egg noodles and cook according to package instructions until tender.
- Stir in the cooked chicken, peas and carrots, salt, pepper, thyme, and parsley.
- Simmer for 5-7 minutes until heated through and flavors are combined.
- Serve hot and enjoy!

- You can use rotisserie chicken for convenience.
