Ingredients

  • 12 oz egg noodles
  • 2 cups cooked chicken, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 cup frozen peas and carrots, thawed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup crushed butter crackers or breadcrumbs (optional topping)
  • 2 tablespoons melted butter (for topping)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook egg noodles according to package instructions. Drain and set aside.
  3. In a large bowl, combine cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  4. Stir in cooked chicken, thawed vegetables, and 3/4 cup of the shredded cheese.
  5. Add cooked noodles and mix until well combined.
  6. Transfer the mixture to the prepared baking dish. Top with remaining cheddar cheese.
  7. If using a topping, mix crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole.
  8. Bake for 25–30 minutes or until bubbly and golden on top.
  9. Let rest for 5 minutes before serving.

Notes

  • Rotisserie chicken works great for convenience.
  • Add sautéed mushrooms or celery for more texture.
