A classic, easy-to-make homemade apple pie with a flaky crust and a sweet, cinnamon-spiced apple filling. Perfect for holidays or any cozy dessert craving.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, chilled and cut into cubes
- 6-8 tablespoons ice water
- 6-7 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- 1 tablespoon sugar (for topping)
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
- Gradually add ice water, mixing just until dough comes together. Divide in half, shape into discs, wrap, and refrigerate for at least 1 hour.
- In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat evenly.
- Roll out one dough disc and place in a 9-inch pie dish. Fill with apple mixture.
- Roll out the second dough disc and place over apples. Trim and crimp edges. Cut slits in the top for steam to escape.
- Whisk egg and milk together and brush over the top crust. Sprinkle with sugar.
- Bake for 45-50 minutes or until crust is golden and filling is bubbly. Cover edges with foil if browning too quickly.
- Cool on a wire rack for at least 2 hours before serving.
Notes
- You can make the dough a day ahead and store in the fridge.
- Mix apple varieties for depth of flavor.
- Serve warm with vanilla ice cream or whipped cream.
