Description

A classic, easy-to-make homemade apple pie with a flaky crust and a sweet, cinnamon-spiced apple filling. Perfect for holidays or any cozy dessert craving.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, chilled and cut into cubes
  • 6-8 tablespoons ice water
  • 6-7 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • 1 tablespoon sugar (for topping)


Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing just until dough comes together. Divide in half, shape into discs, wrap, and refrigerate for at least 1 hour.
  4. In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat evenly.
  5. Roll out one dough disc and place in a 9-inch pie dish. Fill with apple mixture.
  6. Roll out the second dough disc and place over apples. Trim and crimp edges. Cut slits in the top for steam to escape.
  7. Whisk egg and milk together and brush over the top crust. Sprinkle with sugar.
  8. Bake for 45-50 minutes or until crust is golden and filling is bubbly. Cover edges with foil if browning too quickly.
  9. Cool on a wire rack for at least 2 hours before serving.

Notes

  • You can make the dough a day ahead and store in the fridge.
  • Mix apple varieties for depth of flavor.
