A classic and comforting dish, this Easy Shepherd’s Pie features savory ground beef and vegetables topped with creamy mashed potatoes and baked until golden.
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 1 cup frozen corn
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1/2 cup beef broth
- Salt and pepper to taste
- 4 cups mashed potatoes (prepared ahead)
- 2 tbsp butter (for topping)
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- Add garlic and ground beef, cooking until browned. Drain excess fat.
- Stir in tomato paste, Worcestershire sauce, and beef broth. Cook for 2–3 minutes.
- Add peas, carrots, and corn. Simmer for 5 minutes, season with salt and pepper.
- Transfer the meat mixture into a baking dish and spread mashed potatoes on top evenly.
- Dot with butter and bake for 20–25 minutes or until the top is golden.
- Let rest for 5 minutes before serving.
Notes
- You can substitute ground beef with ground lamb for a traditional version.
- Use instant mashed potatoes for a quicker option.
- Add shredded cheese on top for extra flavor.
