Description

Ingredients

For the Pastry:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 1/2 cup cold water

For the Almond Filling:

  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon almond extract


Instructions

  1. Prepare the Pastry: In a large mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs. Slowly add the cold water, mixing until the dough comes together. Wrap in plastic wrap and chill for 1 hour.
  2. Make the Almond Filling: In a bowl, mix together the almond flour, sugar, softened butter, egg, and almond extract until well combined.
  3. Assemble the Pastry: Roll out the chilled pastry on a floured surface into a rectangle. Spread the almond filling evenly over the dough. Fold the dough into thirds like a letter, then fold in the ends to create layers. Chill for 30 minutes.
