Ingredients

- 1/4 cup unsalted butter, softened

Instructions
- Prepare the Pastry: In a large mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs. Slowly add the cold water, mixing until the dough comes together. Wrap in plastic wrap and chill for 1 hour.
- Make the Almond Filling: In a bowl, mix together the almond flour, sugar, softened butter, egg, and almond extract until well combined.
- Assemble the Pastry: Roll out the chilled pastry on a floured surface into a rectangle. Spread the almond filling evenly over the dough. Fold the dough into thirds like a letter, then fold in the ends to create layers. Chill for 30 minutes.
- Bake the Pastry: Preheat the oven to 375°F (190°C). Slice the chilled pastry into squares or triangles. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
