Description
Forgotten Chicken is a classic, easy-to-make comfort dish featuring tender chicken breasts baked over a creamy rice mixture. It’s called ‘forgotten’ because you can set it and forget it while it bakes to perfection.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup long grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 1/2 cups water
- 1 envelope onion soup mix
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat the oven to 350°F (175°C).
- Spray a 9×13-inch baking dish with non-stick cooking spray.
- Spread the uncooked rice evenly in the bottom of the baking dish.
- In a separate bowl, mix together the cream of chicken soup, cream of mushroom soup, and water until well combined.
- Pour the soup mixture over the rice and stir to distribute evenly.
- Place the chicken breasts on top of the rice mixture.
- Sprinkle the onion soup mix evenly over the chicken.
- Cover the baking dish tightly with aluminum foil.
- Bake for 1 hour and 30 minutes, or until the chicken is fully cooked and the rice is tender.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- You can substitute chicken thighs for breasts if preferred.
- For extra flavor, add a pinch of garlic powder or paprika.
- Check the rice for doneness before removing from oven, as ovens may vary.
