Description

Forgotten Chicken is a classic, easy-to-make comfort dish featuring tender chicken breasts baked over a creamy rice mixture. It’s called ‘forgotten’ because you can set it and forget it while it bakes to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice (uncooked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 1/2 cups water
  • 1 envelope onion soup mix
  • Salt and pepper to taste
  • Non-stick cooking spray


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray a 9×13-inch baking dish with non-stick cooking spray.
  3. Spread the uncooked rice evenly in the bottom of the baking dish.
  4. In a separate bowl, mix together the cream of chicken soup, cream of mushroom soup, and water until well combined.
  5. Pour the soup mixture over the rice and stir to distribute evenly.
  6. Place the chicken breasts on top of the rice mixture.
  7. Sprinkle the onion soup mix evenly over the chicken.
  8. Cover the baking dish tightly with aluminum foil.
  9. Bake for 1 hour and 30 minutes, or until the chicken is fully cooked and the rice is tender.
  10. Remove from oven and let rest for 5 minutes before serving.

Notes

  • You can substitute chicken thighs for breasts if preferred.
  • For extra flavor, add a pinch of garlic powder or paprika.
  • Check the rice for doneness before removing from oven, as ovens may vary.
