  • 1 9-inch pre-baked pie crust
  • 6 cups fresh strawberries, hulled and halved
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 3/4 cup water
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Whipped cream, for serving (optional)


Instructions

  1. Arrange half of the strawberries in the baked pie crust.
  2. In a medium saucepan, combine sugar and cornstarch. Gradually stir in water until smooth.
  3. Cook over medium heat, stirring constantly until mixture thickens and becomes clear, about 5-7 minutes.
  4. Remove from heat and stir in lemon juice and vanilla extract.
  5. Let the mixture cool slightly, then fold in the remaining strawberries.
