Description

A hearty and flavorful one-pan meal combining juicy garlic parmesan chicken with crispy roasted potatoes, perfect for weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper.
  3. Place the chicken breasts and halved potatoes in a large mixing bowl or zip-top bag.
  4. Pour the garlic Parmesan mixture over the chicken and potatoes and toss until evenly coated.
  5. Arrange chicken and potatoes on a baking sheet in a single layer.
  6. Bake for 35-40 minutes or until chicken is cooked through (internal temp of 165°F) and potatoes are tender and golden.
