A hearty and flavorful one-pan meal combining juicy garlic parmesan chicken with crispy roasted potatoes, perfect for weeknight dinners.
Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper.
- Place the chicken breasts and halved potatoes in a large mixing bowl or zip-top bag.
- Pour the garlic Parmesan mixture over the chicken and potatoes and toss until evenly coated.
- Arrange chicken and potatoes on a baking sheet in a single layer.
- Bake for 35-40 minutes or until chicken is cooked through (internal temp of 165°F) and potatoes are tender and golden.
- Garnish with chopped fresh parsley if desired and serve warm.
