Ingredients
- 2 boneless, skinless chicken breasts
- 8 oz pasta (fettuccine or spaghetti)
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/4 cup chicken broth
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp butter
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and oregano.
- Cook the chicken for 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside to rest.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and stir to deglaze the pan, scraping up any browned bits from the bottom.
- Lower the heat and add the heavy cream, butter, and parmesan cheese. Stir until the sauce thickens, about 3-4 minutes.
- Slice the cooked chicken into thin strips and add it to the sauce.
- Toss the cooked pasta into the sauce, mixing well to coat.
- Serve immediately, garnished with chopped parsley and additional parmesan if desired.
Notes
- For a lighter version, you can substitute half-and-half for heavy cream.
- Any type of pasta can be used for this recipe, such as penne or rigatoni.
- Feel free to add vegetables like spinach or mushrooms for added flavor.
