Scale
- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (preferably Panko)
- 1 teaspoon garlic powder
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
- 2 eggs
- 2 tablespoons olive oil
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a shallow bowl, mix the Parmesan cheese, breadcrumbs, garlic powder, minced garlic, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken breast into the eggs, then coat with the breadcrumb-Parmesan mixture. Press the coating onto the chicken to adhere well.
- Place the coated chicken breasts on the prepared baking sheet. Drizzle olive oil over the top of each piece for extra crispiness.
- Bake for 25–30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley if desired.
Notes
- Use freshly grated Parmesan for best flavor and texture.
- For extra crispiness, broil the chicken for 2–3 minutes at the end of baking.
- You can substitute chicken thighs for a juicier option, adjusting cook time accordingly.
