Description

A delicious twist on classic French onion soup, these grilled veggie French onion flatbreads combine caramelized onions, grilled vegetables, and melted cheese on crispy flatbreads.


Ingredients

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 1 zucchini, sliced into rounds
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 flatbreads or naan
  • 1 cup shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme leaves (optional)


Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions and cook, stirring often, until golden and caramelized, about 20-25 minutes. Stir in balsamic vinegar and set aside.
  2. While the onions cook, heat a grill or grill pan over medium-high heat. Toss zucchini and bell peppers with 1 tablespoon olive oil, salt, and pepper.
  3. Grill the vegetables for about 3-4 minutes per side until tender and slightly charred. Remove from heat.
  4. Preheat oven to 400°F (200°C).
  5. Place flatbreads on a baking sheet. Spread caramelized onions evenly over each flatbread.
  6. Top with grilled vegetables and sprinkle shredded cheese over the top.
  7. Bake for 8-10 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh thyme if using, slice, and serve warm.
