Description
A delicious twist on classic French onion soup, these grilled veggie French onion flatbreads combine caramelized onions, grilled vegetables, and melted cheese on crispy flatbreads.
Ingredients
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon balsamic vinegar
- 1 zucchini, sliced into rounds
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 flatbreads or naan
- 1 cup shredded Gruyère or mozzarella cheese
- Salt and pepper to taste
- 1 teaspoon fresh thyme leaves (optional)
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions and cook, stirring often, until golden and caramelized, about 20-25 minutes. Stir in balsamic vinegar and set aside.
- While the onions cook, heat a grill or grill pan over medium-high heat. Toss zucchini and bell peppers with 1 tablespoon olive oil, salt, and pepper.
- Grill the vegetables for about 3-4 minutes per side until tender and slightly charred. Remove from heat.
- Preheat oven to 400°F (200°C).
- Place flatbreads on a baking sheet. Spread caramelized onions evenly over each flatbread.
- Top with grilled vegetables and sprinkle shredded cheese over the top.
- Bake for 8-10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh thyme if using, slice, and serve warm.

- Use store-bought flatbreads for a quicker prep.
- You can substitute the cheese with a plant-based option for a vegan version.
- Try adding mushrooms or eggplant for extra flavor.
